When we talk about our restaurant, L'Authentique, the word that always comes up is "bistronomic." What exactly is bistronomy? And more importantly, what does it actually change on your plate?
Bistronomy: A Brief History
The term "bistronomy" appeared in France in the 1990s, championed by a generation of young chefs who refused a choice imposed upon them: either to create classic haute cuisine (expensive, rigid, intimidating), or to run an ordinary bistro with no culinary ambition. They invented a third way: ambitious, creative, technically rigorous cuisine—served in a relaxed setting, with accessible prices and a human touch.
What it Means for Us
At L'Authentique, bistronomy is first and foremost a philosophy of the product. Chef Paul doesn't start with a recipe. It all starts with the market. With what the local producers have to offer that morning.
New potatoes from Noirmoutier, fish, and seasonal vegetables inspire the cuisine of Chef Paul and his team. The menu changes according to the available produce. To discover the local produce, read our article on Noirmoutier's local products.
Bistronomy is also a way of eating
Bistronomy combines refined cuisine with a convivial atmosphere. At L’Authentique, you can discover the menu in the dining room or on the terrace, depending on the current situation. The team can advise you on what to pair with your meal.
The setting is part of the dish
Dining with an ocean view changes the taste of things. The sea air, the light that changes with the time of day, the sound of the waves in the background—all of this is part of the culinary experience. The best tables are the window seats, overlooking the pool and the ocean.
